Developing an enticing and exciting menu of dishes is the corner stone of a successful culinary experience.
Key to this goal is developing a keen understanding of the audience, their expectations, and the raison d’être of the establishment–big or small, fancy or no frills, and in a five star resort or even on wheels. Beyond that it is important to be a generalist with a fundamental knowledge of a variety of world foods, industry connections to source product, and knowledgeable about kitchen and staff logistics and capabilities to bring a menu to life. I have curated these skills and tempered them in the heat of kitchens and fine dining establishments large and small. It is this value that I bring to each menu I design.

The needs and scope of each menu design are entirely unique. Estimated pricing will be established once I have a full understanding of the desired culinary experience. At the end of the day, it is important that the patrons have an incredible experience and the owners have a menu that is cost effective, efficient, flexible, and tailored.
Each menu I design includes standardized recipes, a menu bible including specific instructions on proper preparation, portioning, plating, and a photograph of the finished dish. Training of staff on particular techniques regarding menu and recipes is available if required.
