Pickled Root Vegetables, Beet Juice Reduction, Semi Dried Heirloom Tomatoes, Chive oil

I was trying to come up with a good cold soup for the summer menu at Gluttons. But I’d always had issues with the presentation of soups.

Then I had it! Leave out the liquid, compose the rest of the components beautifully in the bowl, pour the liquid tableside. I used a clear smoked tomato consommé for this version. Every guest would be confused (‘I ordered the soup’), then intrigued by the teapot in the servers hand, and then delighted watching everything swirl and come together before there eyes.
